A Week of Lunches

Life can be so hectic at times and it seems the last thing we want to think about in the morning is what to pack for lunch. I have found taking a little time on Sunday to prep this delicious Herbed Mustard Chicken recipe makes it easy to have a whole week's worth of lunches that taste great and offer variety. Best of all, it's super simple so it won't take long!

Place chicken breasts in a large resealable plastic bag. Add 2 Tbsp. Aged Balsamic Vinegar of Modena to a small bowl.

Add 1 Tbsp. Rustic Herb Seasoning.

Add 2 Tbsp. Dijon mustard.

Add 1 Tbsp. Garlic Garlic™ Seasoning.

Add ¼ cup Avocado Oil.

Stir well and pour over chicken breasts. Seal bag and shake to evenly coat the chicken. Place in refrigerator and let marinate for at least 2 hours.

Remove chicken from bag and cut into ¾-1-inch pieces. Sauté over medium heat until internal temperature reaches at least 165°, about 10 minutes.

Once you have your chicken prepared, you're ready for your week of delicious lunches.

Here are the lunches I prepared, but I'm sure there are so many more ways you can use this chicken!

Barbecue Chicken Sandwiches
I just warmed the chicken, put it on an onion bun and topped it with my favorite barbecue sauce. Serve with a side of your favorite chips. 

BBQ Chicken Sandwich

Chicken Lettuce Wraps
This one is so easy. Simply place warmed chicken sprinkled with a little shredded cheese on a large piece of lettuce and roll up. Serve with cut-up veggies.

Classic Salad with Chicken
Simply cut up your favorite salad veggies (I used romaine lettuce, radishes, cucumbers, sugar snap peas, carrots and grape tomatoes). Top with warmed chicken and your favorite dressing.

Chicken Salad Pita
This chicken works great in our Chicken Salad with Grapes recipe. I enjoyed it on a whole wheat Pita flatbread.

Chicken Wrap
The chicken wrap was my personal favorite. I used a spinach and vegetable tortilla and added lettuce, carrots, a little shredded cheese and a honey mustard dressing I whipped up using ¼ cup plain Greek yogurt, 2 Tbsp. honey and 1-2 Tbsp. Dijon mustard.

It was so great to not have to spend a lot of time thinking about what I was going to have for lunch each day. I hope this makes your morning routine a little easier, too!
