Gluten-Free Chicken, Bacon & Artichoke Pizza

I am the only girl in my house. And you know what that means? (Well, besides the fact that I step on Legos® every day.)

It means that we eat a lot of pizza. I mean, a LOT. There's something with pepperoni and tomato sauce on the menu virtually every week. And while I love the convenience of frozen pizzas, sometimes it's hard to tell where the cardboard ends and the pizza begins. 

So when Tastefully Simple launched a NEW Gluten-Free Pizza Crust & Sauce Mix this spring, I couldn't wait to give it a try. The crust is ready to press into the pan in just 10 minutes with two ingredients. So even if you're short on time or scared of making dough, you can't mess it up - it's really that simple. 

Today's recipe features one of my favorite pizza combinations - grilled chicken, salty bacon, gooey mozzarella and the subtle tang of artichokes. And best of all, it's gluten-free without any fuss. Ready to grab a slice? Come on ... let's get started!

Gluten-Free Chicken Bacon & Artichoke Pizza


  • Gluten-Free Pizza Crust & Sauce Mix
  • 1 cup very warm water
  • 2 Tbsp. olive oil
  • 8 oz. softened cream cheese
  • 1 lb. cooked, chopped chicken breasts
  • 6 oz. jar marinated artichoke hearts, drained and chopped
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded mozzarella cheese
  • 1 Roma tomato, chopped


Preheat oven to 400°. Prepare Crust Mix as directed with water and olive oil. Bake 10 minutes. Combine Sauce Mix with cream cheese; spread over warm crust. Top with remaining ingredients. Bake 15-17 additional minutes or until crust is golden brown. Makes about 6 servings.

Tips and Hints

  • I grilled my chicken breasts using my trusty grill pan and added a little Garlic Pepper Seasoning (yum!). You could also substitute rotisserie chicken.
  • Can't get enough veggies? Sprinkle on some baby spinach or mixed greens, too.
  • To lighten up this recipe, use reduced-fat cream cheese and mozzarella cheese.
  • For a quick time-saver, roughly chop your bacon, put it on a plate lined with a paper towel and microwave it for a few minutes. It's much faster than baking or frying whenever you just need a couple slices.
