Gluten Free Peanut Butter Crunch Brownies

We will be visiting my parents this weekend for Labor Day, as well as my youngest brother and his family. Yay! There will be noise and laughter and lots of food ... of course! They are such great sports about trying my concoctions .. and I'm especially excited for this trip because I will be taking along some of our new gluten free baking mixes. One of my nephews is gluten intolerant, and I always feel guilty when he can't taste some of the recipes we try.

Last time, he sat with his arms folded, staring longingly at the Santa Fe pasta salad I mad made. "Wow," he said. "That looks so good." Broke my heart! So THIS weekend, I will be bringing an extra special treat ... Gluten-Free Peanut Butter Crunch Brownies. They are so stinkin' awesome that I know my entire family will love them!

Gluten-Free Peanut Butter Crunch Brownies


  • Gluten-Free Fudgy Brownie Mix
  • ¾ cup (1½ sticks) melted butter
  • 2 eggs
  • ¼ cup salted peanuts
  • 4 regular-sized peanut butter cups, chopped
  • ¾ cups milk chocolate chips
  • ¾ cups creamy peanut butter
  • ¼ Tbsp. unsalted butter
  • ¾ cups Gluten Free Rice Krispies® cereal


Prepare the brownies with butter and eggs according to the package directions and bake for about 35 minutes (5 minutes less than the package states). Remove from the oven and sprinkle the top with the peanuts and chopped peanut butter cups. Return to the oven and bake for 5 additional minutes. While they are finishing baking, melt the chocolate chips, peanut butter and butter in the microwave at half power for 30 seconds; stir. Repeat until melted. Stir in the cereal to evenly coat. Remove the brownies from the oven and pour the chocolate and peanut butter mixture over top. Spread to cover evenly. Refrigerate for 2 hours before cutting and serving. Store in an airtight container in the refrigerator. More Ways to Mix It Up! Substitute plain Greek yogurt for the melted butter – great way to cut out some fat…and they still taste great – you won’t miss the butter! If you don’t have plain Greek yogurt, any yogurt (flavored or plain) will work, or use applesauce.

Tips and Hints

  • These are hands down the best brownies I have ever made! Wow!
  • I substituted plain Greek yogurt for the melted butter - great way to cut out some calories ... and they still taste great! You won't miss the butter! If you don't have plain Greek yogurt, any yogurt (flavored or plain) will work, or use applesauce.
  • For the record, I accidentally put in 1 cup of yogurt instead of &#!90; cup ... (sigh) ... and the brownies still turned out fine. Yay, Tastefully Simple! I can't ruin a TS recipe even when I try.
  • Check the labels of all your ingredients to be sure they are gluten free if you plan to serve the brownies to anyone who can't have gluten.
