Gluten-Free Pumpkin Swirl Cake

We're getting personal today, folks.

I'd like to tell you about my friend named Lisa. She's funny, smart, adorable and swoons over Pumpkin Spice Lattes from Starbucks every fall. She also has celiac disease. 

So today's gluten-free recipe is especially dedicated to Lisa ... and to all of you who are going gluten-free (whether it's due to health reasons or just a lifestyle choice). 

For us, it's been about 10 years since our pizza-ordering, study-cramming days, but we still get together with our college girlfriends 2-3 times a year. Sometimes we paint the town red - and sometimes we just stay in and paint our toes. But we always have a blast. 

Because of her condition, my friend Lisa typically brings her own food to the festivities. Some good, some bad and some definitely ugly. (Gluten-free shoppers, I know you can relate.) So when Tastefully Simple announced our new gluten-free products, I was so excited - and Lisa was the first person I could not wait to tell. Whatever your story may be, I know YOU will love 'em, too. 

Without further ado ... today's recipe features our Gluten-Free Cinnamon Apple Cake Mix, which is glorious made with pumpkin. Moist. Fluffy. Decadent. And this version includes swirling ribbons of cream cheese to make it even more special. It's the perfect treat for fall afternoons, but it's also elegant enough for entertaining, Thanksgiving, you name it.

But me? I'm totally bringing THIS one to girls' weekend.

Gluten-Free Pumpkin Swirl Cake

Ingredients

  • Gluten-Free Cinnamon Apple Cake Mix
  • 3 eggs, divided
  • 15 oz. canned pumpkin
  • 8 oz. reduced-fat cream cheese
  • ½ cup sugar
  • 1 tsp. gluten-free cornstarch or rice flour

Directions

Preheat oven to 350°. Combine cake mix with 2 eggs and pumpkin; spread half of the batter into a greased 9-inch round pan. In a small bowl, combine remaining ingredients; dollop half the mixture over batter in cake pan. Top with remaining pumpkin batter, and dollop with remaining cream cheese mixture. Swirl together with a knife to create a marbled effect. Bake 45-55 minutes. Cool.

Tips and Hints

  • Serve topped with a dollop of whipped cream and a sprinkle of fresh nutmeg or cinnamon.
  • This would also be divine served with a drizzle of caramel sauce.
  • For muffins/cupcakes (it's a blurry line, right?), reduce the bake time to 20-25 minutes.
