Preheat oven to 400°. Line a rimmed baking sheet with parchment paper or coat the sheet liberally with non-stick spray. Slice large carrots in half lengthwise. Place carrots in a medium bowl.
Add Aged Balsamic Vinegar of Modena to a small glass bowl; slowly add the oil while whisking vigorously. Pour over carrots and toss until well coated. Pour carrots onto the baking sheet.
Bake for 30-40 minutes, depending on how thick the carrots are and on how soft you like them. Flip halfway through so they get nicely glazed on both sides.
To serve, sprinkle with Seasoned Salt and parsley, if desired.
