BBQ Magic Chicken Salad Recipe

  • ¾ cup mayonnaise or light mayonnaise
  • ½ cup milk
  • 1 tablespoon red wine vinegar
  • 18 ounces chopped Romaine lettuce
  • 24 grape tomatoes, cut in half
  • 1 medium cucumber, sliced
  • 1 cup shredded Cheddar cheese
  • ¾ cup croutons of choice, optional
  • 2 cups Creating Magic Pulled Chicken

This recipe requires Create Magic Pulled Chicken recipe.

  1. In small bowl, whisk together first 4 ingredients.
  2. Divide lettuce among 6 large salad bowls or dinner plates. Top with tomatoes, cucumbers, cheese and croutons. Drizzle with desired amount of dressing.
  3. In medium bowl, toss chicken and Smoky Bacon BBQ Sauce together. Top salads with chicken.
Makes 6 servings.

Serve with crusty dinner rolls.

Wine Pairing: Chardonnay

Make Ahead & Freeze: Place Rustic Herb Seasoning in a quart freezer bag. Place cheese in a quart freezer bag. Prepare step 3 and place in a quart freezer bag. Place all bags in a gallon freezer bag. Seal well, label and freeze. Thaw completely. Continue with step 1.
