Chicken & Rice Skillet Recipe

This one-dish skillet is the way to go for that busy time. Pair with a quick simple salad and you have dinner. Delish!

  • 2 Tbsp. butter
  • 1½ lbs. cubed boneless, skinless chicken breast or thighs
  • 1 cup uncooked long grain rice
  • 10.5 oz. can chicken broth
  • 1 cup water
  • 2 cups fresh or frozen (thawed) broccoli florets
  • Salt & pepper to taste
  • Crumbled feta cheese for garnish

Heat butter over medium-high heat in a large skillet with a cover. Add chicken; sauté until chicken is no longer pink. Add next 5 ingredients; reduce heat, cover, and simmer for 15-20 minutes or until rice is tender. Season to taste with salt and pepper. Garnish with crumbled feta cheese. Makes 6 servings.

Rated 4 out of 5 by from Quick and Easy Dinner Recipe was easy to follow and make. It tasted good too. I was able to get my picky kid to eat it as well. I topped it with cheddar cheese instead of feta and it was really good, made it more of a cheesy chicken and rice dish.

Rated 3 out of 5 by from Good for a quick dinner This is a great quick meal. I season the meat with Seasoned Salt and pepper before sautéing, and have added mushrooms as well as a bit of cream cheese at the end to give it a creamy texture. Also, there is an error in the recipe, I'm pretty sure that it should be a 14.5 oz can of broth (aprox 1 3/4 cup).
