Chicken BLT Salad Recipe

Grilled chicken served with a wedge salad and a creamy balsamic dressing.

  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 head Iceberg lettuce, quartered
  • 8 slices no sugar added bacon, cooked
  • 1 large tomato, chopped
  • ½ cup chopped red onion
  • 8 tablespoons Creamy Balsamic Herb Dressing or Citrus Herb Vinaigrette (recipe links in directions)

  1. In a gallon freezer bag, combine first 4 ingredients. Seal well and refrigerate 2 hours or up to overnight.
  2. Prepare grill to medium heat. Remove chicken from bag; discard bag with marinade. Place chicken on grill. Grill, turning once, until internal temperature reaches 165°F on an instant-read food thermometer, about 10-12 minutes. Remove chicken from grill; slice.
  3. Place wedges of lettuce on 4 dinner plates. Top with tomatoes, onions and dressing of choice. Place chicken slices next to salad and crisscross bacon strips over wedge.

Makes 4 servings.

Rated 5 out of 5 by from Delicious new spin on salad! It was a nice new way to marinate chicken and it had good flavor without being overpowering. The creamy dressing suggested worked well with the flavors of the chicken and toppings. Will for sure make it again as a salad and just the chicken too.
