Citrus Noodle Salad Recipe

  • 3 Tbsp Sweet Citrus Vinaigrette
  • 1 Tbsp Rice Vinegar
  • 2 tsp Soy Sauce
  • 16 oz package Rice Noodles
  • 1/2 Red Bell Pepper, Cucumber, sliced thin
  • 1 Carrot grated
  • 1/2 Cilantro chopped (optional)

cooking methods

  • Stovetop


Cook rice noodles according to package instructions. Rinse thoroughly with cold water.

Combine first 3 ingredients then add vegetables. Toss together to coat. Add rinsed rice noodle and cilantro. Toss together and enjoy.

*I like to add red pepper flakes or thin sliced jalapeno for a little heat.
