Coconut Curry Pork Tenderloin Recipe

  • 1 (13.5 ounce) can light coconut milk
  • 1 tablespoon curry powder
  • 1½ pounds pork tenderloin, seasoned with salt and pepper

  1. In a gallon freezer bag, combine first 3 ingredients. Add seasoned pork. Seal well; toss to coat. Refrigerate 2 hours or up to overnight.
  2. Prepare grill to medium heat. Remove pork from marinade; discard bag with marinade.
  3. Place pork on grill. Grill, turning occasionally, until internal temperature reaches 155°F on an instant-read food thermometer, about 20 minutes.

Makes 6 servings.

Wine Pairing: Fruity Rosé.

Alternate Baking Directions: Preheat oven to 425°F. Place pork on a greased rimmed baking sheet. Bake until internal temperature reaches 155°F on an instant-read food thermometer, about 25-35 minutes.

Rated 5 out of 5 by from 100% recommend. Impressed the in-laws Definitely need to marinate this overnight. A few hours are not enough. I also added WAY more curry powder than a tablespoon, but I do really like curry. I impressed my mother-in-law with this and the roasted cauliflower for dinner. I grilled mine on my in-door electric George Forman grill. I will be making this again this summer, it was so easy and flavorful.

We prefer the slow baked in the oven version. Absolute deliciousness! And this same recipe idea works great with chicken as well. Keto friendly too for all my fellow ketoers!
