Easy Peanut Noodles Recipe

  • 8 ounces rice noodles
  • 1 red bell pepper, sliced into short thin strips
  • 1 cucumber, sliced into short thin strips
  • ½ cup julienned carrots
  • Optional garnishes: fresh cilantro, crushed peanuts

  1. Prepare noodles according to package directions; rinse with cold water and drain well.
  2. In large bowl, combine noodles with vegetables. Add Thai Peanut Sauce and toss to coat well.
  3. Serve topped with garnishes, if desired. Can be served cold or at room temperature.

Rated 5 out of 5 by from This is a delicious Thai recipe! I made this dish for my husband and I without meat. We loved it! It is delicious with the carrots and red pepper and we also enjoyed it with cilantro and crushed peanuts. My hubby said the cucumber should be spared for the next time, but there will definitely be a next time. I already ordered another bottle of the peanut Thai sauce :)
