Heat a large skillet over medium high heat. Add first six ingredients. Cook 3 minutes or until shrimp is just pink. Toss with lemon peel, juice and chopped parsley. Remove shrimp from pan and place in a bowl.
Remove tails from shrimp. Thread 1 grape tomato, 1 parsley leaf and 1-2 shrimp onto a toothpick. Makes 12 servings.
*If using cooked shrimp, reduce cooking time.
