  • Gluten-Free Cinnamon Apple Cake Mix
  • 2 cups chopped apples (any variety, peeled or unpeeled)
  • 2 eggs*
  • 1 cup chopped walnuts (optional)

Preheat oven to 350°. Combine ingredients; stir to blend. Spread mixture in a greased 8 x 8 baking pan. Bake 45-55 minutes. Cool completely. Makes about 9 servings. *Egg substitute may be used. More Ways To Mix It Up! Stir in ½ cup raisins, white vanilla chips or chopped pecans. Use 2 cups diced fresh rhubarb or peaches in place of apples.
