Preheat oven to 350°. Whisk first 3 ingredients; set aside for 10 minutes. Whisk batter again; add banana, cinnamon and vanilla. Fill greased mini muffin pans 2/3 full and top each with a few nuts. Bake 18-20 minutes. Tops will be light in color. Serve with your favorite syrup if desired. Makes about 36 mini muffins.
