Gluten-Free Pumpkin Muffins Recipe

  • Gluten-Free Cinnamon Apple Cake Mix
  • 15 oz. can pumpkin
  • 2 eggs
  • 2 tsp. pumpkin pie spice

Preheat oven to 350°. Combine all ingredients in large bowl; stir until blended. Divide mixture evenly into a greased 12-muffin tin. Bake 20-25 minutes. Makes 12 muffins. Optional: For glaze drizzle, combine ½ cup powdered sugar, 3 tsp. water and a shake of pumpkin pie spice. Stir and drizzle on top of baked muffins.
