Grilled Chicken & Strawberry Salad Recipe

  • 1-2 tablespoons olive oil
  • 1½ pounds boneless skinless chicken breasts, cut into 6 pieces
  • 1 (16 ounce) container fresh baby spinach leaves
  • 1 (16 ounce) container fresh strawberries, sliced
  • 1 (4 ounce) container crumbled goat cheese
  • 1 shallot, sliced
  • ¾ cup slivered almonds, toasted
  • ½-¾ cup Melon Poppy Vinaigrette

  • Grill


  1. Prepare grill to medium heat. Brush oil on chicken; sprinkle with Citrus Herb Seasoning. Place chicken on grill.
  2. Grill, turning once, until internal temperature reaches 165°F on an instant-read food thermometer, about 10-12 minutes.
  3. Divide remaining ingredients among 6 dinner plates. Slice chicken and serve over salads.
Makes 6 servings.

Serve with breadsticks.

Wine Pairing: Pinot Grigio or Rosé.

Note: Substitute 1 cup cheese of choice for goat cheese, if desired.
