Mama Mia Chicken Burgers Recipe

  • 1½ pounds ground chicken or turkey
  • ½ cup plain panko bread crumbs
  • 2 tablespoons Veggie Vinaigrette
  • 1 tablespoon olive oil
  • 6 slices mozzarella cheese
  • 6 hamburger buns
  • 2 medium tomatoes, sliced
  • 1 ripe avocado, pitted, peeled and sliced

  1. In large bowl combine first 4 ingredients. With lightly greased hands form into 6 patties.
  2. In large skillet heat oil over medium heat; place patties in skillet. Pan-fry, turning once, until internal temperature reaches 165°F; on an instant-read food thermometer, about 8-10 minutes.
  3. Top burgers with cheese; cook until cheese is melted. Place burgers on buns. Top with tomatoes and avocado slices.

Makes 6 servings.

Serve with Mama Mia Steak Fries.

Make Ahead & Freeze: Prepare step 1. Place patties in a gallon freezer bag between sheets of wax paper. Seal well, label and freeze. Thaw completely. Continue with step 2.
