  • 2 pounds golden fleshed potatoes, cleaned, cubed
  • 3-4 cups reduced sodium chicken broth
  • ⅓ cup canned light coconut milk, warmed (reserved from Creamy Balsamic Meatballs)

  1. In large saucepan, combine first 3 ingredients. Bring to a boil. Reduce heat and simmer 20 minutes or until potatoes are fork tender. Drain.
  2. Mash potatoes with coconut milk to desired consistency. Salt and pepper as desired.
