1 medium shallot, thinly sliced
⅓ cup pine nuts, toasted, optional
18 grape tomatoes, sliced

In small bowl, whisk together first 4 ingredients.
Place arugula in large bowl; toss with vinaigrette. Divide among 6 plates.
Top salads with remaining ingredients.
