ingredients

  • 1 (16 ounce) package rotini pasta
  • 1 cup grape tomatoes, halved
  • 1 English cucumber, chopped
  • 1 red or orange bell pepper, chopped
  • 1 (4 ounce) package mini pepperoni slices
  • 1 (2.25 ounce) can sliced black olives, drained
  • ¼ cup extra-virgin olive oil
  • 1 cup crumbled feta cheese

directions

  1. Prepare pasta according to package directions to al dente; rinse with cold water; drain.
  2. In large bowl, combine pasta with remaining ingredients except cheese. Toss to coat; salt and pepper as desired.
  3. Gently stir in cheese. Refrigerate, covered, 30 minutes. Stir before serving.
