- Preheat oven to 375°F. In a large oven-proof skillet, heat oil over medium-high heat. Add shredded potatoes, Onion Onion Seasoning and 1 teaspoon Ultimate Steak Seasoning. Sauté 4-5 minutes. Stir in kale and sausage sauté 3-4 minutes.
- Meanwhile, in large bowl, whisk together eggs and remaining 1 teaspoon Ultimate Steak Seasoning.
- Pour into skillet. Sprinkle with tomato slices and goat cheese, if desired. Let cook 1-2 minutes. Carefully transfer to oven. Bake 25-30 minutes or until eggs are set.
Makes 6 servings.
Serve with an arugula salad topped with fresh fruit.

Make Ahead & Freeze
: Prepare step 1; cool completely and place in a gallon freezer bag. Prepare step 2; place in bag with filling. Seal well, label and freeze. Thaw completely. Preheat oven to 375°F. Heat skillet over medium-high heat, spray with no-stick cooking spray. Add contents of bag to skillet and continue with step 3.
