Turkey Meatball Salad Recipe

  • 3 cups chopped Romaine lettuce
  • 1 small cucumber, sliced or chopped
  • 6 grape tomatoes, cut in half
  • 2 tablespoons diced red onion
  • 5 pitted Kalamata olives, cut in half, optional
  • 1-2 jarred pepperoncini, sliced, optional
  • 1 serving (6) leftover meatballs from Spaghetti Squash & Turkey Meatballs, reheated (recipe link in directions)
  • 2 tablespoons 14-Day Reset Citrus Herb Vinaigrette or Creamy Balsamic Herb Dressing (recipe links in directions)


Note: This recipe uses Spaghetti Squash & Turkey Meatballs recipe and one of the following 14-Day Reset dressings: Citrus Herb Vinaigrette or Creamy Balsamic Herb Dressing.

  1. In large bowl or storage container, combine first 6 ingredients.
  2. Top with meatballs (reheated, if desired) and drizzle with dressing of choice.

Make Ahead: Prepare step 1 in a storage container. Place meatballs in a microwave-safe storage container and dressing in a small storage container. Refrigerate all containers up to 1 day.
