Zucchini Ribbon Salad Recipe

The flavors of this summertime salad are so light and refreshing this will sure to become a family favorite.

ingredients

  • 4 medium zucchini
  • ½ cup chopped walnuts, toasted
  • ½ cup crumbled goat or feta cheese
  • Zest of 1 lemon
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon (or 1 Dinner Mixer packet) Seasoned Salt

  1. Trim ends of zucchini. Using a vegetable peeler, shave zucchini into long, thin strips, peeling each side of the zucchini until reaching the seed core. Discard the core.
  2. Place zucchini ribbons on 6 salad plates. Sprinkle with walnuts, cheese and lemon zest. Drizzle with olive oil and honey. Sprinkle with desired amount of Seasoned Salt.

Makes 6 servings.

For remix Ravioli Soup recipe: Place 2 servings of zucchini ribbons (only) in a storage container. Refrigerate up to 2 days.
